Delicious and comforting Mexican Style Chorizo Enchiladas smothered in red sauce and gooey, melted cheese. The perfect go-to dish for your next dinner.
1Preheat oven to 350°F.
2Combine ground pork and seasoning mix and cook over medium-high heat for 5-7 minutes or until fully cooked, breaking it into small pieces. After draining grease from the meat, allow it to cool slightly.
3In a large mixing bowl, combine the cooked chorizo, black beans, corn, 1/2 cup cheese and 1/2 cup enchilada sauce. Mix to combine.
4In a 13x9 ungreased baking dish, spread 1/2 cup of enchilada sauce.
5Place 1/2 packed cup of filling into each tortilla, roll up and place in the baking dish, seam side down. Repeat with all the tortillas.
6Pour remaining enchilada sauce over tortillas, and bake uncovered for 10 minutes.
7Remove from oven and sprinkle the remaining cheese on top, bake again uncovered for 12-15 minutes or until the cheese is bubbling and golden.
8Let stand for 5 minutes before serving.
