Vegan Chili with Beans

Ingredients

2 cups chopped onion

2 Tbsp olive oil

1/2 cup chopped carrots

1/3 cup chopped red bell pepper

2 chipotle chilies in adobo sauce, finely chopped

1 Tbsp minced garlic

1 cup chopped mushrooms

2 cans (15 oz each) kidney beans, rinsed and drained

1 package (8 oz) traditional seitan, finely chopped

1 cup prepared Orrington Farms® Vegan Vegetable Base & Seasoning

¼ cup tomato paste

2 Tbsp soy sauce

2 tsp dried oregano

2 tsp chili powder

Directions

1In a Dutch oven, sauté onions in oil for 6-8 minutes or until translucent. Add the carrots, bell pepper, chilies and garlic. Sauté for 2 minutes longer, stirring frequently. Add mushrooms; cook for 3-4 minutes or until softened.

2Stir in the remaining ingredients. Bring to a boil. Reduce heat; cover and simmer for at least 1 hour.
