Hearty Chicken Tortilla Soup

Ingredients

1 lb boneless skinless chicken breast halves, cut into 1-inch pieces

1 Tbsp olive oil

5 cups prepared Orrington Farms® Chicken Broth Base & Seasoning

½ cup uncooked long grain rice

1 tsp ground cumin

2 cups prepared Mrs. Wages™ Classic Salsa

1 can (15.25 oz) fiesta sweet corn, drained

2 Tbsp minced fresh cilantro

2 Tbsp fresh lime juice

Tortilla strips

Directions

1In a Dutch oven, cook chicken in oil over medium heat for 5-7 minutes or until no longer pink.

2Stir in the broth, rice and cumin. Bring a boil. Reduce heat; cover and simmer for 20 minutes. Stir in the salsa, corn, cilantro and lime juice. Cover and simmer for 5-10 minutes or until rice is tender. Ladle into bowls; top with tortilla strips.
