Penne Pasta & Chicken

Yield: Approx. 8 Servings

INGREDIENTS
1 Lb. Boneless Chicken Breasts
1 Lb. Penne Pasta
1 8 Oz. Package Fresh Mushrooms Sliced
2 Lbs. (2 pkgs.) Fresh Spinach (Remove Stems and Wash)
2 Tbs. Olive Oil
5 Cloves Chopped Garlic
1 Tbs. Orrington Farms Chicken Base
1 Tbs. Butter or Margarine
2 ½ Tbs. Water
2 Cups Freshly Grated Parmesan Cheese
Pepper, Parsley & Basil to Taste

Cook chicken by boiling or frying, then cut into small pieces or strips.  Put olive oil in frying pan, and add garlic and mushrooms.  Cook, stirring frequently, on low about 5-10 minutes.  Cook pasta according to directions, drain, mix with butter or olive oil, cover and set aside.

Add the the above: Orrington Farms Chicken Base, water, butter and spinach. Cover and simmer on low, stirring frequently to be sure spinach cooks down. Cook about 10-15 minutes. Cook pasta according to directions, drain, mix with butter or olive oil, cover and set aside.

Pour chicken/spinach mixture into the pasta and mix well.  Add 2 cups of grated parmesan cheese and mix well.  Serve immediately.
