Microwave Saucy Fish Fillets

INGREDIENTS
1 Can (8 oz.) Pineapple Tidbits in Juice
1 Tablespoon Sugar
1 Tablespoon Cider Vinegar
1 ½ Tsp. Cornstarch
½ Tsp. Orrington Farms Chicken Base
¼ Tsp. Ground Ginger
Paprika
Pinch of Ground Red Pepper
¼ Cup Sliced Green Onions
¼ Cup Sliced Water Chestnuts
4 White Fish Fillets, ½ Inch Thick
2 Tbs. Butter, melted
½ Cup bread crumbs
To Microwave: Drain pineapple, reserve the juices. For sauce, add enough water to juice to make 2/3 cup liquid. In a microwave safe bowl, whisk together juice mixture, sugar, cider vinegar, cornstarch, Orrington Farms Chicken Flavored Base, ginger and red pepper. Microwave on high 4 to 5 minutes until sauce boils and thickens, whisking after two minutes to prevent lumping. Stir in green onions, water chestnuts and pineapple; set aside.
Arrange fish fillets in a 12 x 8 inch microwave dish with the thickest parts to the outside edges of dish. Drizzle with butter, then sprinkle with breadcrumbs and paprika. Cover with waxed paper. Microwave on HIGH 5 to 9 minutes. Fish is done when thin areas flake easily with a fork and thick areas are fork tender. Let fish stand for 2 to 3 minutes and serve with pineapple sauce.
