Beef Bourguinone
INGREDIENTS
12 Lbs. beef cut into 1 inch cubes
¾ Cup Olive Oil
3 Lbs. Onions, Chopped
1 ½ Cups Flour
3 Tablespoons Paprika
2 Pints Red Wine
1 ½ Pints Tomato Puree
2 Quarts Water
3 Tablespoons Orrington Farms Beef Base
2 Lbs. Bacon, Diced
2 Lbs. Mushrooms, Quartered
Pepper to Taste
- Heat oil and brown beef, bacon and chopped onions. Remove mixture saving oil.
- In a heavy stock pot, add oil, flour, paprika, pepper, mix well and let cook until light brown, stirring often.
- Heat water and dissolve Beef Base in water. Add heated beef stock to flour mixture, combine well and add tomato puree, red wine, mushrooms and beef mixture.
- Let mixture boil, then reduce to a simmer, cook for 2 ½ - 3 hours. Serve over noodles or rice.
