Beef Bourguinone

INGREDIENTS
12 Lbs. beef cut into 1 inch cubes
¾ Cup Olive Oil
3 Lbs. Onions, Chopped
1 ½ Cups Flour
3 Tablespoons Paprika
2 Pints Red Wine
1 ½ Pints Tomato Puree
2 Quarts Water
3 Tablespoons Orrington Farms Beef Base
2 Lbs. Bacon, Diced
2 Lbs. Mushrooms, Quartered
Pepper to Taste

  1. Heat oil and brown beef, bacon and chopped onions.  Remove mixture saving oil. 
  2. In a heavy stock pot, add oil, flour, paprika, pepper, mix well and let cook until light brown, stirring often.
  3. Heat water and dissolve Beef Base in water.  Add heated beef stock to flour mixture, combine well and add tomato puree, red wine, mushrooms and beef mixture.
  4. Let mixture boil, then reduce to a simmer, cook for 2 ½ - 3 hours.  Serve over noodles or rice.
