Bean Soup

AMOUNT: Makes Approx. 1 Gallon

INGREDIENTS
2 Pounds Dried Great Northern Beans
1 Gallon Cold Water
2 Quarts Hot Water
5 Ounces Orrington Farms Ham Base

  1. Wash beans well.  Combine beans and cold water, bring to a boil, boil 2 minutes.  Remove from heat and let stand for 1 hour.
  2. Stir in hot water and Ham Base.  Heat to boiling, reduce heat and gently boil for 2 hours until beans are tender. 
  3. Remove and set aside 3 cups of cooked drained beans.  Puree the remaining soup and measure the yield (3 quarts + 1 Cup).  If under, add hot water or, if over, simmer longer.  Combine soup with the reserved cooked beans, mixing well.  Heat and serve.
